Due to the cool climate in Mie Prefecture, the first harvest takes place here in early May. For their best Sencha (Tokujou), the Hayashi family mainly harvests the fine leaves of the shrub varieties Asatsuyu, Sayama Kaori and Yabukita. In the humid and cool climate of the region, these varieties develop an incredibly flowery sweetness. This fine tea is steamed (chu-mushi) by the Hayashi family a little longer than usual. The leaf structure is very fine, the leaf material is dark green. The infusion is bright neon-green and slightly cloudy due to the slightly longer steaming time. Mie Tokujou Sencha smells delicately flowery and tastes pleasantly soft and fresh with excellent sweetness.
