We expect the Matcha from this year's harvest to be available in the last week of November. Use our reminder function now to be notified as soon as the Matcha is available.
The total production of this extremely exquisite and first-class Matcha in this yeaar is less than a few kilograms, of which we were able to reserve a few packs of 30 grams each due to our long and trusting contacts this year.
A detailed description of the Nakanishi family and information about the production of this exquisite Matcha can be found at http://nakanishi.eu/
The Gen Chou Uji Matcha is an exceptionally high quality, which was produced only in very limited quantities.
The harvest started around the end of April. It takes several weeks for the harvest and processing to be completed due to the complex and largely manual processing involved.
Gen Chou Uji Matcha is considered one of Japan's finest Matcha varieties and is grown and processed in a 100% traditional way. It comes from Uji, the only historically recognized place in Japan for "true tea" and is produced without any use of agricultural chemicals. The leaves are entirely hand-picked. It is a touch stronger than the Takeno Joo Uji Matcha, but slightly more delicate in taste than the Shirasagi Uji Matcha from the same tea garden.
In contrast to its "big brother", the Takeno Jôô Uji Matcha, the complete processing of the Gen Chou Uji Matcha, from harvesting to packaging, takes place almost entirely by hand! Only the sifting and separation of the leaf flesh from the veins and branches is done with mechanically driven sifters. All other processing steps before and after are done by hand!
The tea garden is about 1.25 ha in size and is located in the prefecture of Uji. The Nakanishi family has been growing organic tea there since 1980. "100% traditional cultivation and processing at the highest level" means that the tea garden of the Nakanishi family is completely covered with black nets, under which the tea bushes grow high. Once a year about 30 helpers come into the garden to harvest the tea - exclusively by hand!
The leaves are carefully processed into Tencha and then carefully ground in a stone mill.
Gen Chou Uji Matcha is an excellent variety of the Nakanishi family's garden, for which only the sweetest shrub variety of the family with the fullest umami is harvested.
Taste
Intense and bright green in the skin, the taste of this Matcha is at first excitingly fruity, it lacks any astringency. In the aftertaste the Matcha develops a soft and creamy, almost sweet aftertaste on the palate. Compared to the Takeno Jôô Uji Matcha, the Gen Chou Uji Matcha has a small hint of less umami and a little less sweetness.
