This Fukamushi sencha is made of fine leaves of the first harvest, freshly picked and steamed for relatively longer time (around 1.5 min). In general, steaming time ranges between two turning points fukamushi vs. asamushi. Japanese word “fukamushi” (lit. “deep steam”) means long steaming in relation to the size of the leaves. Due to the longer steaming time, the steam gets deeper into the leaf whereby the leaves’ cellular structure breaks down.
As a consequence, more of the tea leaf substances go into a very intensive green infusion. Fukamushi sencha obtains its totally individual flavour from the exclusive usage of Oku Yutaka’s leaves. For this tea we use 50% shaded leaves [Kabuse], and 50% not-shaded leaves.
