The Miumori Kirishima Sencha is in many ways a fascinating tea, because the leaves alone go back to an old tea tradition. After the first seeds of tea plants came to Kirishima about 700 years ago, the leaves of this tea do not originate from those plants that came from Uji, but from seeds of plants that the founder of the Kirishima tea garden brought back from Shizuoka around 1900. The leaves of precisely these tea bushes, which are still harvested and processed by Shutaro and Kenji Hayashi today, are found in this special tea.
However, unlike Miyama Kirishima Sencha, another tea from the Hayashi family garden, the Miumori Kirishima Sencha uses both shaded leaves [kabusecha] and unshaded leaves [roji saibai]. The hard part, however, is that leaves from flat steaming [asa-mushi] as well as leaves from deep steaming [fuka-mushi] are used. While the shaded leaves contribute significantly to the special sweetness of this tea, the briefly steamed leaves bring a particularly flowery scent, and the deeply steamed leaves the full aroma.
